The glycemic index is a number from 0 to 100 assigned to a food, with pure glucose arbitrarily given the value of 100, which represents the relative rise in the blood glucose level two hours after consuming that food. A food’s glycemic index measures the impact a food has on our body's blood sugar levels. Refined sugar and foods containing sugar with high levels of glucose have a high glycemic index generally from 55-99 on the glycemic index. These sugars are digested quickly, resulting in a glucose spike that raises blood sugar levels. Consistent high blood sugar levels are linked to negative health effects including Type II diabetes, high blood pressure, and obesity.
By comparison, Dulce Azul and Dulce Oro blue agave Certified Low Glycemic nectars are known for having a very low glycemic index. Primarily, this is because almost all of the sugar in our agave is fructose and there is minimal processing during manufacturing, which keeps the raw nectar as pure as possible.

Monk Fruit Vs Dulce Azul & Dulce Oro Blue Agave Nectar
Monk Fruit sweeteners contain sugar alcohols as bulking agents such as Erythritol, which may be harmful to the human body despite a zero glycemic index rating. Our blue agave nectars do not have any bulking agents or added fillers. Monk Fruit is also a nonnutritive sweetener with zero calories and zero nutrients. Both of our blue agave nectars have naturally occurring vitamins and minerals, as well as inulin, a prebiotic fiber.
Stevia Vs Dulce Azul & Dulce Oro Blue Agave Nectar
Stevia sweeteners are known to have Stevioside and Rebaudioside in them. These chemicals are known to cause bloating, nausea, dizziness and numbness in some. Stevia is of the Asteraceae plant family which is related to Ragweed and can be highly allergic to some who ingest it. Stevia sweeteners are processed and as a result have zero vitamins or minerals in them. Again, our blue agave nectar wins this competition with ease.
Honey Vs Dulce Azul & Dulce Oro Blue Agave Nectar
Since honey is made from bees, the insect's body parts along with wax are often found in bottled honey, making honey a non-vegan sweetener. Honey has a glycemic index of 58 Vs our blue agave nectars with a glycemic index of only 9. Since honey is made using various flower pollen its allergy risks are high for many. The Agave Tequilana Weber var. blue species agave plant is a succulent, therefore its pollen levels are very low. Lastly, some companies use high fructose corn syrups or other added sugars to blend in with their honey to cut costs and increase profit margins. We never blend our blue agave nectar with anything! It's 100% natural and pure from the plant.
Maple Syrup Vs Dulce Azul & Dulce Oro Blue Agave Nectar
Although a natural sweetener, maple syrup has a glycemic index of 56 and lacks nutrients and fiber. Our blue agave nectars have naturally occurring fructan and inulin in them. The process of heating maple sap to concentrate the fructose is similar to our blue agave nectar. The difference is maple syrup gets heated up to 180-200 degrees which virtually destroys most of the naturally occurring vitamins, minerals and enzymes. Our blue agave nectars are heated using a low thermal process and never exceed 113 degrees. This allows the raw blue agave sap to maintain its naturally occurring vitamins, minerals and enzymes through bottling while concentrating the natural fructose found within.
Our blue agave nectars are rich in naturally occurring inulin, a prebiotic fiber that helps maintain a healthy intestinal system and promotes regularity. Inulin helps regulate appetite as well as lipid and glucose metabolism. Inulin also stimulates intestinal flora, creating a prebiotic effect which promotes better absorption of minerals such as iron, calcium, potassium and magnesium.
